40 CIDERCRAFTMAG COM GUEST MIXOLOGIST THOMAS THOMPSON BARTENDER k BARREL PROOF NEW ORLEANS Barrel Proof is a neighborhood bar of sorts located in the lower Garden District of New Orleans Once you sit down and take a moment to look over the menu you can see there is more to this bar than dark corners bourbon specials and lively conversation Best known for its immense selection of brown liquor the concept is focused on simple ingredients and letting the whiskey shine But that doesnt mean there isnt room for some amazing cider cocktails too courtesy of bartender Thomas Thompson His Everything Drifts cocktail complements the Barrel Proof love of whiskey with the best qualities of cider The cocktail started as a way of introducing my favorite spirit pastis into a cocktail featuring our house bourbon and spirit animal Old Grand Dad Thompson says As the drink came together I realized all of the ingredients were from regions where various members of my family came from That inspired the name of the drink Everything Drifts EVERYTHING DRIFTS MAKES 1 COCKTAIL 1 ounce Old Grand Dad Bonded bourbon ounce Granier Mon pastis ounce Nux Alpina walnut liqueur ounce Ramazzotti amaro ounce pistachio syrup recipe follows 1 2 ounces Argus Cidery Fermentables Vinho Pearde Garnish lemon peel Add all ingredients except the cider to a mixing glass Fill with ice and stir Strain into a chilled coupe glass Top with cider Express the lemon peel over the top and garnish PISTACHIO SYRUP MAKES ABOUT 2 CUPS cup shelled pistachios 1 cup water 2 cups sugar Pinch of salt Place the pistachios in a medium saucepan and toast lightly over medium heat stirring often Add the water sugar and salt Stir and bring to a light simmer then immediately remove from heat Cool to room temperature then refrigerate for 12 hours Once the syrup is infused strain it into a glass bottle and store refrigerated for up to 30 days SPIKED VIA BOURBON STREET
