CIDERCRAFTMAG COM 43 PRODUCER TO WATCH Paradise Ciders HONOLULU HI H awaii came late to the cider game but thats to be expected given its tropical climate mostly exotic fruit and fairly removed location This is the land of big waves and sun kissed passion fruit right Paradise Ciders is Hawaiis irst bona ide cider producer The Honolulu based label opened in 2016 by ex bartenders and homebrewers Shaun Peck and Kasey Sulheim The duo watched as thirsty locals and tourists alike navigated Polynesian themed cocktails and a growing local craft beer scene Those who asked for local cider had precisely zero options An Oahu cider operation would shake up the archipelago Our goal is to capture paradise in a glass and create lavors that you can only ind from the fresh tropical fruits here in Hawaii says Serena Peck Paradise manager Using cider more like a base or background layer Paradise is elevating local lavors like pineapple dragon fruit mango lilikoi lychee guava and more The result is a lively spectrum of about a dozen Hawaiian made infused ciders the lions share falling within the semisweet category Anywhere else the hit of sweetness might be too much but in the company of vibrant tropical fruit notes it tends to balance things out nicely Paradise may not be working with heirloom apple varieties but its access to an eclectic cast of local produce is unparalleled Moreover the produce comes in incredibly fresh making Paradises small batch work all the better And with canning and new distribution in the works we may just see them on the mainland Mark Stock
